Is it possible to replace certain character sounds ("AAAaaaah", taking a hit, etc...) but not just for a single dungeon, but for the entire game?
For instance, I want Minotaurs sound like unicorns (an example, don't take me seriously) how would I do that? (If possible)

You would have to modify grimrock2.dat. Knowledge of binary file I/O, how to decipher an unknown file format, etc. would be necessary.

Sorry, mimay, but he just has to replace the sound definition for "damage_minotaur_male" or "damage_minotaur_female"...

I couldn't imagine that someone will change sounds for campaigns that already exists.
So: no, zimberzimber, you cannot replace sounds for the main-campaign. Just for your own mod. (or you have to be very clever in manipulating binaries)
