Aye, it feels like some memory corruption is going on here ..

Since you use the Steam version i guess you already verified that your local game files are error-free.
(right-click on game in stream library -> "properties" menu option -> "local ..." tab -> "verfiy ..." button)

I doubt it would be the memory. There would be other noticeable signs, not only coming from LoG2.
1. I only have the one HDD.
2. No change.
No upgrades to the system, I can play other 3D games without any problems at all, and MemTest86 said everything was fine.

Yeah I've verified it, uninstalled/reinstalled, all that jazz.

It actually seems to me that there is some kind of incompatibility with my graphics settings and the game's settings, though all my settings (for the game and NVidia) are default (I've tried fiddling with settings from both to no avail).
It might just be something that can't be solved without the devs looking into it.

I heard of LoG incompatible driver settings within AMD's Catalyst but not with nVidia's drivers.

Nevertheless ...
To be absolutely sure it's not some inaccessible remnant setting of an older driver version i'd use a registry sweep with a tool like DDU followed by a clean re-install of the driver. When that's done do a DirectX re-install with the distribution from the _CommonRedist folder, a DirectX test with "dxdiag" including a "save all info" which you can then post here so we mabe can get an idea what's up IF the game still crashes.

I followed your suggestion, ran DDU and did another clean reinstall of the driver, and that didn't work.
I've done the DirectX reinstall and I've provided the dxdiag results below:

What driver version are you using? Did you try rolling back to an older version? IMHO latest 344.x branch nVidia drivers just suxx.

I installed version 340.52 instead (from version 344.65) and that seems to have worked. Though, it's still not a solution really, but it's a start.
I imagine that, due to how long it's been since the devs coded the graphics rendering side of the game, it's just a matter of updating the game slightly for newer versions of 660 Ti drivers (it is a rather specific bug, bug it's a bug all the same).

LoG2 does work with the 344.xx branch. no problem at all. I tried LoG2 with the first driver that enabled DSR for all GTX 400, 500, 600 and 700 card (344.48) and currently run it with it's predecessor 344.11 because i found it to be faster.

Oh I forgot about that actually, it's not the cause but I removed it anyway.

As it turns out, the Haali codec pack came from the Android Development Tools for Eclipse, but I've removed it.

Yeah, it's stopped working again after I hadn't changed anything at all.
So I guess the issue is still here.

No upgrades to the system, I can play other 3D games without any problems at all, and MemTest86 said everything was fine.
I'm afraid I am completely out of ideas then :(. I only suggested memory because I had a really weird issue once with HL2 once that turned out to be a RAM problem, but it doesn't sound like that's happening with you if other (more intensive) games run fine. You might want to send an email to he LOG support address if you haven't already.

Just to confirm, I've been running Grimrock 2 with all of the latest driver updates since release on my NVidia laptop and not had any problems. You've clearly found a weird fringe-case that has slipped through the net because it's likely that nobody else has ever seen this crash! :(

I'm with John here but also kinda out of ideas. Maybe the RAM timing setting in your BIOS are extremely tight. Make sure you set the correct speed for your memory chips and at least have their timings set to "use SPD".

Beside a non-optimal RAM setting i can only think of one other cause of memory corruption being a virus infections.
