How much damage can a "Dismantler" do while striking in the air? Could it be possible for it to destroy the enemy for a short short period of time?

The absolute number depends on it's wielder. The physical damage is displayed below the character's hand holding "Dismantler" plus the occasional crit plus the occasional shockburst.

I'm not sure i understand what you're asking. A destroyed a.k.a. killed enemy is removed from the game.
