Unfortunately dual wielding is a concept that doesn't work very well in Grimrock, at least in the traditional sense. You can of course wield two weapons at the same time but doing so doesn't net you any additional advantages such as attacking with both weapons at the same time.
It's probably more useful to have a shield, a ranged weapon, a torch or something more "exotic" in your other hand.

Aha, fair enough, well having a melee weapon in one hand and then maybe a dagger to throw in the other is pretty cool to. Besides someone has to hold my compass, I'm not using the automap or drawing one, so I'll definitely need that little item!

I don't think there's enough time in the universe to max out every skill

What if I am on a spaceship traveling the speed of light? Then would I be able to reach the level cap?
Yay, someone is finally tackling physics on these forums!
But unfortunately no. If you are travelling at c, no time at ALL will pass for you, hence you can't play the game.

Time might not pass for the individual, but PC's do not care for that as they have an internal clock. So theoretically if you are traveling on a spaceship at the speed of light, you can play Legend of Grimrock and cap all the skills in under a second! Classic case of time dilation if I'm not mistaken!
Now I notice this particular topic has been dead for a while, but I have a question somewhat related...
MINOR SPOILER ALERT:
On level 9 you get the Ice Lizards, that do respawn in the Temple Grounds area. My question is, do I have to sit around and wait for them, or can I conveniently kill 3-4, then sleep for a while (in game that is) and expect them to be respawned. Since they have a high drop-rate of Ice Lizard Steaks, it would be quite viable for a few levels! If only I had a microwave for those steaks though... (Hint. hint - Poseidon's Microwave secret for LoG 2

There are a couple hidden plates that trigger the respawn of one or two of them, with a cool down time before they'll work again each time. One is outside the front door, the other is in a hall heading toward the outer sanctum entrance.
