Need some Model editing advice/assistance.

I've been playing with editing textures and using GMT to change materials attached to models, but I'm not sure where to start actually editing an existing model.

e.g. how would I go about turning this existing Great Axe:

Into this Throwing Axe:
Image

Any help would be greatly appreciated.

That looks like a job for Blender. You'd have to delete the mesh of one of those blades, might be easy, might be less than easy. Then hope the textures are still there.

Thanks Batty.. I've downloaded blender, but I have absolutely no clue how to use it...

I got as far as exporting the .model as an .obj file using the GMT, and then imported it into blender (with a plugin I had to download separately)... but I have no idea how to edit the mesh.. having used GIMP I was kinda hoping for some sort of selction tool that I could use to just slice off one side of the blade.

I would go on YouTube, there's lots of Blender tutorials. Deleting things is the extent of my knowledge, not difficult but you need to be careful.

I was thanking about making a tutorial about this subject, specific to Grimrock.
how to export existing models with GMT , load them up in Blender, edit them and export them again into GMT, apply the material and save them as model.
I'm doing this several times over one evening, should not be a problem to record one pass of it.

Blender is great, but there is a bit of a learning curve. I haven't used it for years, so this might be bad advice... But you might want to consider a free 30 day trial of Milkshape (low poly 3D modeller that's a bit out of date, but probably quite good for simple stuff like chopping a few polys off). If you just want to do some basic remodelling, it might be a bit more straightforward.

Well I managed to do what I wanted using Blender by deleting a lot of vertices by hand. Also had to re-size the model because the import had made it huge.

Here's the finished article, along with an icon that I put together.:
