Is there a way yo change Antialiasing and Texture Filtering? something like a note pad?

Good question. Not sure.

Texture Filtering can be changed in the game options. There is no antialiasing, sorry!

You can always inject SMAA or FXAA:

Good to know I asume if I change the AA in the nvidia control panel is going to afect grimrock too¿

Anti-Aliasing will turn all the textures black if you try to force it on the game. So don't.
