Defence & Evasion

Hi,
Could anyone pls clarify how defence/evasion works under the hood?
I wonder if the following is true: the higher stat value is, the less effect you get from every point added? I assume this is true, and it's interesting to have a little clue at which point there is no reason to pump these stats anymore...
Basically, I want to be able to make a sane decision in a situation when you have a 10 defence/30 evasion character, and say two armors - one gives +6 defence, another increases evasion by 6, what will be the optimal choice? Currently I have no idea... just dumb defence and evasion numbers that don't tell me anything besides a general 'the bigger the better'
